There really is a reason they call the portabello mushroom the “steak” of mushrooms.  Seasoned right and cooked to perfection, this mushroom is juicy and delicious and can satisfy even the most stubborn meat eater.  But hey, that’s not what we’re about. We’re about getting the best flavors out of food for you to enjoy WITHOUT even thinking about meat.

Portabello mushrooms have zero cholesterol, zero fat, and are really only about 40 calories per cup of sliced mushroom.  You simply can’t beat that for a healthier burger choice!

Ingredients

  • 2 large portabello mushrooms
  • 4 teaspoons olive oil
  • 1/2 cup balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1/2 cup barbecue sauce

Directions

  1. 1. Remove the stem from each mushroom.
  2. 2. With a small spoon or knife, scrape the dark gills out from inside the mushroom and discard.
  3. 3. In a bowl combine all ingredients except for barbecue sauce.
  4. 4. Place the mushrooms in the marinade and coat well and let them sit for 20 minutes, turning occasionally.
  5. To Barbecue:
  6. 1. Place the mushrooms bottom side down on the grill and let cook 5 minutes.
  7. 2. Turn the mushroom over and allow the mushroom to cook on the other side.
  8. 3. Brush the mushroom with barbecue sauce on either side, flipping to allow the mushroom to cook all the way through. Depending on the size of the portabello mushroom you may need to do this a few times, as cooking times may vary.
  9. When your mushroom is cooked to your satisfaction, remove and place on a bun and add your favorite fixings! It’s truly delicious!
  10. Not into burgers? Served with vegetables and mushrooms, a portabello mushroom that has been grilled is as perfect a “steak dinner” as you can get!

Tips

  • Some people like to press their mushroom down on the grill to help some of the juices cook off, while others like to have their patty juicy. You be the judge!
